PMA hosted the webinar, Cleaning and Sanitizing Best Practices for Legacy Operations. Dr. Trevor Suslow, VP of Produce Safety kicked off the session reminding us that to advance your cleaning and sanitation programs you must start with risk awareness. Many facilities share similar risk factors such as condensation and hard to clean areas. Next, Erin Mertz with Ecolab, gave an overview of foundational practices to incorporate into your cleaning and sanitation programs. These included the four factors of cleaning, tips for drains, and considerations for establishing a deep cleaning schedule. The webinar concluded with Melissa Ortner, Channelized Solutions who discussed sanitary design principles. She offered many questions that operation teams should ask when establishing a cleaning and sanitation program and offered practical suggestions for trouble areas such as welds, fasteners and belting.
