Product Sampling

Guidelines for Exhibitor Sampling

  • Food and beverage sampling is permitted if it is the exhibitor’s product. Food and/or beverage items used as traffic promoters (e.g., coffee, sodas, bottled water) must be purchased from Centerplate, the exclusive catering provider at the New Orleans Convention Center.  
  • Samples are limited to a maximum of four (4) ounces.  
  • Selling food or drink on the show floor by exhibitors is prohibited.  
  • The sampling company/organization will be fully responsible for any and all liabilities that may result from consumption of their products, and shall waive any and all liability against Centerplate, Ernest N. Morial Convention Center, and the City of New Orleans. Any exhibitor planning to sample in their booth must submit this short form agreeing to the terms
  • On average, exhibitors hand out 500-700 samples per day (samples increase the closer you are to broadway). 
  • Cleaning stations will be available to exhibitors throughout the show floor. 
  • Exhibitors are required to order tables and electricity for food and beverage services ordered from Centerplate. 

Serving Alcohol in Your Booth

  • Only Centerplate bartenders may dispense and serve alcoholic beverages. Alcohol must be purchased from Centerplate unless you have written approval from them to serve your own manufactured product.  
  • Alcoholic samples are limited to (½) one half ounce of distilled spirits and (2) two ounces of beer or wine 
  • All exhibitors that would like to have alcohol served in their booth must submit a request to serve alcohol form to gain approval before working with Centerplate.  
  • Exhibitors must have adequate room to serve attendees within the confines of their rented booth space and have appropriate insurance coverage.  

Cooking In Your Booth

  • Exhibitors are permitted to use electric appliances, natural gas, or butane (2 lb. cylinder max) in the booth to cook. Propane or Liquefied Petroleum Gas are not allowed to be used or brought into the convention center. Exhibitors demonstrating or using cooking appliances must have at least two 3-A: 40-B: C extinguishers in the booth at all times. Small 2½-gallon electric deep-fat fryers and small grills of not more than 200 square inches will be allowed. All frying equipment must be equipped with a grease shield. Any deep frying will require a Type K fire extinguisher within the booth. A fire watch is required. PMA will pay for fire watch if the fire marshal deems it necessary for your booth.
  • All cooking appliances must be isolated at least 4 feet away from the public or be protected with a clear plastic shield. The shield must be placed along the front and the sides of the appliance. 
  • No kitchen facilities will be available for exhibitor use. Need help? Centerplate provides services to assist exhibitors with food and beverage sampling. All catering needs must be submitted by October 4 to ensure service and appropriate staff are available. A late fee may be added for any late orders. 
  • If Centerplate is preparing your samples, you will still need to submit this food sampling form.
