Guidelines for Exhibitor Sampling

  • Sampling of exhibitor's product is permitted and encouraged. Exhibitors may sample their own product or order from the convention center's exclusive catering provider, Aramark, before September 25.
  • Samples are limited to a maximum of 1 ounce of food, 3 ounces of beverage.
  • Food and/or beverage used as traffic promoters (e.g., coffee, sodas, bottled water) must be purchased from Aramark.
  • Catering supplies (ice, napkins, cutlery, etc.) can be ordered through Aramark
  • Staff serving or preparing samples must wear gloves and follow the Onsite Food Sampling & Handling Guide
  • If cooking/preparing samples in the booth, a sneeze guard/plexi divider should be used.
  • Selling food or drink on the show floor by exhibitors is prohibited.
  • The sampling company/organization will be fully responsible for all liabilities that may result from consumption of their products, and shall waive all liability against IFPA, Aramark, Anaheim Convention Center, and the City of Anaheim in the Insurance form they submit.
  • On average, exhibitors hand out 700-1,200 samples per day (quantities are dependent on size of booth and location).
  • Cleaning stations will be available to exhibitors throughout the show floor.

Serving Alcohol in Your Booth

  • Exhibitors must submit a request to serve alcohol form and gain approval.  
  • Only Aramark bartenders may dispense and serve alcoholic beverages.
  • Alcohol must be purchased from Aramark unless you have written approval from them to serve your own manufactured product.  
  • Exhibitors must have adequate room to serve attendees within the confines of their rented booth space and have appropriate insurance coverage.  
  • Alcoholic samples are limited to 1/4 ounce of distilled spirits, 1 ounce of wine and 2 ounces of beer.

Cooking In Your Booth

  • Exhibitors are permitted to use electric appliances, natural gas, or butane (2 lb. cylinder max) in the booth to cook. LP gas (propane, butane) or natural gas must be disclosed on a heat producing device notice form prior to any on-site use. Flammable and combustible liquids, hazardous gases, pressurized cylinders and tanks, and hazardous chemicals (including oxidizers) are prohibited inside the convention center.
  • Exhibitors demonstrating or using cooking appliances must have: A 2A,40 B.C. fire extinguisher (5 lb. ABC) with a current tag from a licensed fire extinguisher contractor, in addition, a K-class fire extinguisher must be within 30 feet of any fryers in the booth.
  • IFPA will arrange for fire watch if required by the Fire Marshal Regulations.
  • Each exhibit using cooking or food warming devices may be subject to an individual inspection. Cooking devices must be separated from the public by at least four feet, or by a substantial barrier between the devices and the public.
  • No kitchen facilities will be available for exhibitors to use. Aramark is available to exhibitors that require assistance with food and beverage cooking and sampling. All catering needs must be submitted by September 25 to ensure service and appropriate staff are available. A late fee may be added for any late orders. 
  • If Aramark is preparing your samples, you need to submit this order form by September 25 to avoid additional costs and guarantee any requests.
  • Aramark offers dry, refrigerated, and frozen storage for product that needs to be stored prior to recipe involvement. This is separate from the product storage offered by GES, which will be brought out to your booth based on the shipping label used. There is a receiving charge of US$75/day and must be reserved - order deadline is September 25. Inquire with Aramark Catering for details.
